Beans baked in molasses have been a staple Boston dish since its colonial days, when the City of Boston was “awash in molasses” due to its rum-producing role in the triangular trade.
Navy Beans, brown sugar, molasses, and a few spices is the basic recipe. The secret to making amazing Bostonia baked beans is the slow and low method of cooking in a cast iron Dutch oven that allows the dish to intensify and create more depth in the flavor profile. We use smoked ham hocks to add smokiness to the beans that can cut through the molasses and brown sugar.
